At first, Bu Helmy said the muffin was unique because there was a strawberry on the top and she hope that the taste was like chocolate strawberry. When she cut the muffin with hand, she said that the texture is soft, especially it was fresh from the oven and she realised it was banana muffin. About the smell, she thinks that is banana muffin with brown sugar. She said that the appearance was good because brown and red was nice combination. In terms of taste, she doesn't really like sweet, but the sweetness was perfect and the taste of the banana was very strong. Unfortunately, the strawberry was not too obvious because the strawberries only small pieces. However, she said that the banana muffin was success.

"They look really good" said Miss Mandy. That was the first impression from miss Mandy about the muffin. I very happy after she touched the muffin because the muffin was warm. Then, when she cut the muffin in half she said that the dough was mix very well. In terms of texture, she said it is very good, not too dry and not too moist. The appearance looks very interesting because the strawberry was very appealing. Her criticism for me is to add more strawberries inside, so that the taste of the strawberry is obvious. About the smell, she said that the smell like banana. Overall, she liked the banana muffin.

Firstly, Bu Stella looked so happy when I gave her the muffin. By tasting the muffin, she said that the sweetness was okay, not too sweet. In terms of smell, she said that the banana it not strong, but it taste like banana. About the size, it's enough for one person. Although, the texture was too sticky she still like the muffin because she loves banana cake.

Healthy Banana Muffin (Lower calorie)
Ingredients
- 1½ cups whole meal pastry flour
- 1 teaspoons baking powder
- 1 teaspoons baking soda
- ½ salt
- ½ cup brown sugar
- 1 egg
- 3 ripe bananas, mashed
- 6 strawberry, chopped into half
- 1/3 cup olive oil
- Preheat oven to 350°F. Line muffin tins with paper liners.
- In a medium-mixing bowl combine banana, the olive oil, egg, and stir it.
- In a big mixing bowl combine the flour, brown sugar, baking powder, baking soda and salt.
- Combine the wet batter with dry batter and whisk it until mixed.
- Use a 1/4-cup measuring cup to portion out the batter into the 12 lined muffin cups.
- Put the chopped strawberry on the top of the batter.
- Bake for 25-30 minutes, or until the tops of the muffins are nicely browned.
Evaluation
First of all, that was my first time succeed to make the modified muffin, which is banana muffin.The result of the muffin was very satisfying since the muffin was rising. Besides, I'm so proud with my self because it was the first I'm succeed to make the modifies version, which means I modified the some ingredients, such as whole meal, brown sugar, and olive oil, so the risk of not rising quite big. However, while I make the muffin at school, it was very nice. The muffin looked beautiful and appealing with the strawberry on the top. But, I think the muffin was little bit under cook on the top since I only use bottom heat. The taste of the muffin was so much better than before, it was similar with the muffin that I bought in Starbucks last month. The dough texture was also different with the previous one, the previous one was very watery that make the cake have moist texture. The level of the sweetness was also good, not too sweet and not too tasteless. In terms of smell, I think the banana was very strong, so people will think that is banana muffin. In this case, I would like to improve several things to make it different, such as use a paper cup, so that it is easily to carry and stay hygienic from dirty hand. Besides, adding more strawberries inside the dough also can give good taste in my opinion. However, I also succeed to make the lower calories food because the actual muffin cake has 247 calories/serving and the modified muffin cake has 115/serving. So, I have decrease 53% calories from the actual one. Overall, I would give 7 out of 10 for the modified muffin.
Ingredients
- 300 g self –raising flour
- 1 tsp. baking powder
- 150g sugar
- 150g chopped chocolate
- 2 eggs
- 250 ml milk
- 1tsp. vanilla extract
- 50 gr melted butter
Procedure
- Heat oven to 180C/fan 160C/gas 4 and line a 12-hole muffin tin with paper muffin case
- Tip the flour into a large bowl.
- Mix the sugar, baking power with the flour. Make a well in the centre.
- In a separate bowl stir the melted butter, milk, and eggs until evenly combined.
- Pour the liquid mixture into the well and stir quickly and sparingly with a wooden spoon. The mix will look lumpy and may have the odd fleck of flour still visible, but don’t be tempted to over-mix.
- Tip in the choco chips and give it just one more stir. Divide the mix between the muffin cases – they will be quite full – then sprinkle the tops with the final tbsp of the choco chips and the rest of the sugar.
- Bake for 30-40 mins until raised and dark golden. Cool for 5 mins in the tray before lifting out onto a rack to cool completely.
